In 1990, Jesus Lorenzo from the "Los Peperetes" restaurant opened a small canning factory in Galicia in northern Spain. There, he began canning high-quality seafood and fine fish from the rias - fjord-like estuaries – of the region. The sardines, which are now popular far beyond the borders of Spain, are still caught in Rianxo and the Ria de Arosa on the Atlantic coast. After careful cleaning with brine, the sardinillas are steamed to give them a nice, firm texture. They're then placed in the tins by hand and covered with the finest olive oil. A real delicacy - tender and wonderfully flavoursome.
