Sansibar Aceto Balsamico di Modena "Selezione Speciale di Sansibar" is made using traditional procedures and methods. The balsamic vinegar is topped up and decanted several times into casks of noble wood, such as chestnut, cherry, ash, mulberry and juniper, which helps develop its characteristic aroma.
True to tradition
In line with tradition, the casks are stored in attics in constant semi-shade and plugged with stones from the Panaro river so that only air can enter. As is the case when making sherry, this balsamic is produced using the Solera method. Young balsamic is continually added to the mature balsamic, which then ensures a round and consistent flavour. The base of this balsamic vinegar is approximately 13 years old.
